Worked with various fish and garnishes but focused mainly using the fresh trout from our onsite tank. Butchered and cooked many thousands of trout. Also, did purchasing for the restaurant, learning how to deal with purveyors and companies.

I worked the wood burning grill, expedited nightly service and helped to write the nightly menus. It was here that I really started working with seasonal and local ingredients. Mark Rosenstien, chef and owner, had been foraging and sourcing local produce since the late seventies.

Worked with long time Asheville Chef Larry Waldrop to write and execute seasonal menus. Here, I was fortunate to learn many classic American dishes as well as how to refine southern favorites that we could run in a fine dinning setting.

Here I was able to hone all of the basic fundamentals in a controlled, rigorous program. I learned menu design, food costing, sanitation, and management skills. Unfortunately, money problems arose and I had to work overtime which put me in a place that I had to put school on hold. I have not been able to complete the program to date.
