Manage BOH staff as well as FOH staff. Have the knowledge of all company policies. Train and work with line and prep cooks as well as dishwashers,expediters,servers,and hostess. Familiar with all progressive discipline paperwork. Generate and record all pertinent sales and labor figures. Prompt completion of all opening duties prior to and after arrival of the staff as well as all closing duties. Serve safe certified with knowledge of basic health and sanitation. Accurate and organize all on hands on daily basis. Set and use of the Par System to generate the product quantity to order necessary to maintain freshness. Excels at accurately expediting during busiest shifts. Create daily and weekend specials.
