Dietetic Internship Program

Utah State University is a fully accredited dietetic internship that provides the 1200 practice hours needed to become an eligible Registered Dietitian. The program is unique because of its distance learning format. I completed all of my dietetic training in beautiful San Diego, CA.

I completed the following rotations at various sites in San Diego:
Food service Management Rotation, San Dieguito Union High School District.

Public Health Nutrition Rotation, North County Health Services, WIC Program

Dietetic Intern, Clinical Rotation

During my clinical rotation, my primarily responsibility was ensuring optimal medical nutrition therapy through needs assessment, planning, and carrying out intervention, consulting with other disciplines, and educating patient and/or caregiver on nutritional needs. I served as an educational resource to food and nutrition employees, other medical staff, and the community.

North County Health Services WIC

Dietetic Intern, Public Health Rotation

As a WIC intern I worked to determine the medical/nutritional risk of applicants/participants by evaluating anthropometric, biochemical and other health-related data. Prescribed supplemental foods for diet deficiencies.
Implemented the agency’s Nutrition Education Plan and related curriculum.
Coordinated individual and group nutrition education consistent with participants category, language, nutrition intervention level and status in the program. Communicated with participant's health care provider as needed for continuation of quality service. Provided counsel on nutritional and health-related problems in an empathetic manner, observing sound nutritional practices and participant confidentiality. Delivered breastfeeding and nutrition education classes.

Dietetic Intern

As a dietetic intern I worked closely with the Director of Child Nutrition Services and the Nutrition Specialist to develop, plan and prepare menus and menu specifications to meet student acceptability and federal and state guidelines, including menus for special dietary needs; evaluated food and recipes for use in District Meal Programs; developed, implemented and monitored comprehensive nutrition education programs, wellness program and promotions within District schools to educate students and staff on nutrition and healthy eating habits; and performed related duties as assigned.

As a graduate of the San Diego State University Didactic Program I am confident of my skills and ability to perform as a Registered Dietitian. I completed my degree with a 3.65 GPA and was accepted to a fully accredited dietetic internship. Being a San Diego State Alumni has allowed me to develop an extensive network of Dietitians and health professionals within the community.

I am an active member of the Academy of Nutrition and Dietetics, the San Diego Dietetic Association and the International Association of Eating Disorder Professionals (IAEDP).

Certified Lactation Educator (CLE)

During my undergraduate I completed a community nutrition internship at the WIC program. I discovered a passion for assisting mothers with the challenges of breastfeeding with evidenced based practices. I completed 45 hours of clinical training as a Certified Lactation Educator with the goal to complete my International Board Certified Lactation Consultant (IBCLC).

Diet Technician

As a Diet Technician for a Residential Eating Disorder Facility in La Jolla, CA I was responsible to consult with the Registered Dietitian to ensure implementation of the best standard of nutrition and dietary services. The Diet Tech is responsible for implementing the dietary component within the program. Responsibilities include dietary support, grocery budget allocation, client menu planning, maintaining a clean and well stocked kitchen, cooking and baking as recommended, and appropriately discerning between appropriate and inappropriate client eating behaviors.

Research Assistant and Data Manager

As part of the Healthy Dining research team I served as a project coordinator on an NIH-funded grant conducting research in the areas of restaurant menu and recipe modification, healthier menus, and employee wellness programs. Skills Acquired Include: Data entry, analysis of quantitative and qualitative data, data coding, and statistical analyses using Excel.
