Cafe Tu Tu Tango

I was responsible for hiring, training, coaching and terminating employees. Also for the ordering and inventory of food/beer/liquor. While employed at Cafe Tu Tu Tango I reworked and redesigned a new drink menu. I also kept a close eye on both Front of House and Back of House labor costs. I was given the lead on all group sales and banquets, which ran very smoothly. The Front of House schedule was another responsibility of mine, which included over 35 employees. While most of my focus was on the Front of House, Cafe Tu Tu Tango did not have a kitchen manager during my tenure there, allowing me to gain knowledge of the Back of House mechanics and fundamentals. I was required to maintain a strong floor presence and touch as many tables as possible. Depending on my shift I would take care of closing/opening duties including analyzing daily sales and labor reports, safe float counts and bank drops.
