As an assistant i have a responsibility to selection the best coffee that we must to buy. I must grading the coffee and cupping the coffee. If we found a defect in cupping, we can rejected it.
I also checked a quality of handpick process before we export the coffee to buyer. The triage and defect must be same or approached with the sample that we sent to buyer before.
Sometimes, we buy the parchment of coffee, and i must smell it to know the coffee are fermented, chemical, or musty. If the parchment had a poor quality, we can rejected it.
