Managed personnel, made specialized menus for restaurant and private party's , ordering and cost control, pastries and desserts, sautéing on the line while overseeing the kitchen , soup,stocks, fresh pastas and breads, training sous chefs to do things according to me or the owners . And helping with the front of the house for random tasks like aloha system, running food, expediting, and checking with customers to make sure their overall experience was nothing less than outstanding.

Captains Cook, Midnight baker, and cook for crew. I would manage personnel , cook standardized recipes for a crew of 180 , and do things according to the officer in charge . This was a very critical and demanding job. It's hard to explain working in 15ft+ seas unless you have been there before.

It was run by the best chefs in the USCG, and also from CIA in CA, this was a very demanding school for the short amount of time it lasted, they cram everything into a 4 month period, starting in the classroom with basic fundamentals, and gradually working you into a kitchen environment , I graduated honor student of my class
