A fine dining from scratch restaurant, I was in charge of putting away orders, and prepping items such as breaking down chickens, all stocks, Frenching rack of lambs, ect. Also cleaning up and washing all dishes used durning shift.

Sous chef

I was the sous chef for nearly nine years, Mahogany is a very busy year round restaurant. Was in charge of ordering, organization, running the line, breaking down all meat, and seafood. Keeping the staff in line. Pretty much had to do it all except for make a schedule, which I would also do while the head chef would be on vacation.
